Power Recipes: Healthy Stuffing

Stuffing might seem like a weird one to you, but its actually my favourite thing to eat on the Christmas table. Unfortunately for me, its also calorie-packed.

Ingredients

  • 1 tbsp Light Butter
  • 14 oz Stuffing Bread
  • 1/2 cup Chopped Onion
  • 1/2 cup Diced Celery
  • 1/2 cup Diced Carrots
  • 1/2 cup Diced Musrhoom
  • 2-3 Cloves of Garlic
  • 2- 2 1/2 cup Chicken Broth
  • Poultry seasoning to taste
  • Pepper to taste around 1 tsp

Directions

  1. Preheat oven to 350 degrees
  2. Heat a large saute pan once heated add butter and spray with cooking spray
  3. Add carrots and saute add celery, onion, garlic and mushroom add
  4. Additional cooking spray if needed continue cooking until veggies are tender
  5. Remove from heat transfer to bowl and allow to cool slightly
  6. In a large bowl add bread stuffing and veggies toss together season with pepper and poultry seasoning
  7. Add chicken broth mixing until moist but not soaking taste and adjust seasoning
  8. Spray casserole dish with cooking spray add stuffing mix and cover with
  9. Foil bake 20-25 minutes uncover and cook additional 10 minutes or until slightly crispy on top
  10. Serves around 1/2 cup each serving
