Must-Read: The BBQ Master Class
As we’ve been touting in this space for a few days now, it is summer time people! And that means one thing (besides getting in shape to not embarrass yourself while heading out to the beach) … it’s time for BBQ season! While we’re always more of the “go to other people’s barbeques” instead of “having to host our own barbeque, forcing us to actually do the cooking and cleaning up afterwards” type of folks, there are (amazingly) people who enjoy hosting their own BBQ parties! Maybe you’re one of them! In which case, it’s time to point you in the direction of the Men’s Health BBQ Master Class.
Over 8 weeks, the site offers to make sure you’re the “best grill man on the block.” How? By offering instructions such as this week 1 piece on how to cook the Ultimate Burger. Middle Eastern Lamb Burger
Recipe by Amitzur Mor executive chef of Vareli in New York
What you’ll need:
1 lb 80/20 (what 80/20 means) ground lamb shoulder
2 Tbsp chopped fresh parsley
1 Tbsp chopped fresh oregano
1 tsp ground cumin
1 tsp ground coriander
1 tsp ground black pepper
1/2 tsp ground cinnamon
1/2 tsp ground cardamom
How to make it:
1. Mix all ingredients well in a bowl and let rest for 20 minutes.
2. Shape the burgers into patties about 2/3-inch thick. Grill or sauté to medium-rare, about 6 to 8 minutes total, flipping once.
3. Serve on a burger bun or inside pita bread with mayo or tahini, fresh tomato, red onion and a drizzle of extra virgin olive oil. Makes two big burgers or four quarter-pounders.
Again, we don’t particularly understand the types of folks that host their own BBQs and do the cooking on their own … but we love them because then they can feed us more and more food! So get to it, cooker types. And invite us over. We’ll bring the beer.
